Bacon-Wrapped Chicken and Pepper Bomb

- 2 chicken breasts , cut lengthwise or 4 chicken breast halfs
- 8 slices of bacon
- 2 sweet peppers or 2 jalapeño peppers
- 4 ounces cream cheese , softened
- 1 clove of garlic , finely chopped
- 1/2 cup of barbecue sauce
- Salt and pepper to taste

Step 1
If using chicken breasts, cut them lengthwise into thin fillets and pound them until they're thin enough to cover the pepper half.

Wash the peppers, cut them in half, and remove the seeds.

In a mixing bowl, combine the cream cheese, finely chopped garlic, salt, and pepper until smooth.

Fill each pepper half with 1-2 teaspoons of the cream cheese mixture

Place each half in the middle of each chicken breast fillet. Roll it up and then wrap two pieces of bacon (one at a time) tightly around the rolled chicken.

Preheat oven to 425°F and place chicken bombs on a foil-lined baking sheet. Bake for 20 minutes, turning once to help cook the bacon.

Remove chicken from oven and drizzle with BBQ sauce. Pop it back in the oven at 375°F for another 5 minutes.
