My school celebrates with a day-long booze fest. My city turns the entire river green. But I like to start the celebration of all things Irish with a stack of boozy Bailey’s chocolate chip pancakes and homemade mint syrup.
Pounding back a pint o’ Guinness that early in the morning just isn’t quite as appealing as a pile of hotcakes. Now you can have your cakes and drink up, too.
Boozy Mint Chocolate Chip Bailey's Pancakes

- 1 box of pancake mix
- 1 1/2 cup Bailey's Irish Cream
- 1 package of fresh mint
- 1/4 cup maple syrup
- 1/2 cup water
- Handful of chocolate chips
Ingredients

Step 1
Bring the water to a boil and remove from heat. Add roughly chopped mint leaves and let steep for about 15 minutes.

Make pancake mix according to the box directions, substituting Bailey’s for water. Add in chocolate chips and fry in a pan.

Strain out most of the mint leaves from the syrup and set aside.

Stack up the cakes, drizzle desired amount of syrup over the top and garnish with fresh mint.
