Ever since trying skillet cookies (also known as pizookies) for the first time, I’ve been fascinated by cast iron skillets. You can use them to make bread, breakfast foods, and unbelievable desserts. However, every time I use one, I find myself with enough food to feed a small army. While at my grandma’s house last week, she showed me her new mini cast iron skillets from Amazon. In my opinion, they’re revolutionary for a single college girl like myself. They’re perfect for personal sized, single serving dishes. Single Serving Brownie Skillets

- Medium
- 4 five-inch mini cast iron skillets
- 1 stick butter
- 1 cup semisweet chocolate chips
- 1 1/2 oz unsweetened chocolate
- 2 eggs
- 1 1/2 teaspoon vanilla extract
- 1/2 cup sugar
- 1/3 cup flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 scoops vanilla ice cream

Step 1
Over a stove, melt together the baking chocolate, chocolate chips, and butter. Stir constantly. Once melted, let cool for 15 minutes.

In a medium mixing bowl, combine eggs, vanilla and sugar. Pour in the chocolate mixture, then add in flour, baking powder and salt.

Gently mix in chocolate chips.

Divide mixture up into four small skillets, filling each up 3/4 of the way full.

Bake for 20 minutes, remove from oven and let cool. Top each with a scoop of vanilla ice cream and enjoy your personal pan brownie!
