This Healthy Oatmeal Chocolate Chip Cookie recipe has been modified and essentially created by my wonderful mother who absolutely loves cookies.
She created a healthy oatmeal chocolate chip cookie recipe that she doesn't have to feel bad about eating. She even considers them as a healthy snack, because, hey, who eats plain oatmeal?
There's always a little sugar thrown in there and dark semi-sweet chocolate chips are good for you (all those antioxidants). So what's not to love about these cookies?

- 1 cup whole wheat flour
- 2 cups oats
- 1 teaspoon baking soda
- 2 tablespoons butter
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla
- 2 cups chocolate chips
Ingredients

Step 1
Preheat oven to 350° Fahrenheit.

Whisk together the flour, oats, and baking soda.

Cream together the butter, brown sugar, and white sugar.

Add the egg, unsweetened applesauce, and vanilla. Mix well.

Slowly add the dry ingredients to the mixture.

Add the chocolate chips, and maybe a few extra for good luck.

Freeze the mixture for 20 minutes or refrigerate for 30 minutes. You want the batter to be stiff after.

Drop the mixture by heaping two tablespoons onto a parchment paper-lined cookie tray.

Bake for about 15 to 20 minutes until golden.

After the cookies cool, you can make cute, healthy ice cream sandwiches by putting a dollop of Halo Top Ice Cream in between two cookies!
