For my family, food has always been the most important part of the holidays. During the holiday season, we typically start our day with a giant brunch, snack on leftovers all afternoon, and eat a feast at dinner. Unfortunately, last year my body realized I no longer have the metabolism of a ten year old. Day after day of uninhibited indulging left me feeling heavy, tired, and altogether Grinch-like.
This year, I've made it my mission to create lighter versions of my family's favorites. This healthy French toast, which is stuffed with pumpkin, gives you the fiber and protein you need to start your day off right. Plus, it gets its flavor from pumpkin and spices, rather than lots of sugar and syrup.
Pumpkin-Stuffed French Toast

- 2 tablespoons Greek yogurt
- 1 tablespoon + 1 teaspoon canned pumpkin puree
- 1 1/2 teaspoons maple syrup
- 2 teaspoons cinnamon divided
- 2 slices whole wheat bread
- 1/4 cup almond milk
- 1 egg
- 1 teaspoon vanilla

Step 1
Combine Greek yogurt, pumpkin, maple syrup, and 1 teaspoon cinnamon. Mix until thorough incorporated.

Spread pumpkin filling over one slice of bread. Place remaining slice on top to form a sandwich.

Whisk together almond milk, egg, vanilla, and 1 teaspoon cinnamon in a shallow dish.

Place bread in batter and let each side soak for one minute.

Heat oil in nonstick skillet over medium heat. Fry sandwich until golden brown, 3-4 minutes per side.

Garnish with granola, cinnamon, or any other healthy topping that you can think of.
