If you're looking for a new sandwich to try for breakfast, lunch, or even dinner, you need to give this chorizo tater tot grilled cheese a try.
I must admit, I was a bit skeptical at first because although I like all the ingredients separately, I wasn't so sure about the combination. The idea of putting tater tots, onion, chorizo (or veggie chorizo if that's your thing), and cheese all in one sandwich sounded like it could be a bit much.
What I discovered after tasting it was that the these ingredients make a pretty dope combination. And the best part is that you can make the meal in 15 minutes or less.
Chorizo Tater Tot Grilled Cheese

- 4 slices bread
- 4 tablespoon butter
- 1/2 cup ground Mexican chorizo
- 1/2 yellow onion thinly sliced
- 6 slices colby-jack cheese
- 1 handful tater tots cooked according to package directions
- Sour cream to serve

Step 1
Combine Mexican chorizo and sliced onion in a medium skillet and cook over medium heat for 8 minutes or until fully cooked.

Butter the bread and add cheese, cooked Mexican chorizo and onion, and tater tots to the sandwich.
