Zucchini and other squash are fresh summertime vegetables. This recipe for zucchini corn fritters is light and fluffy and is perfect for entertaining. I paired them up with a creamy grain mustard sauce, but you can use whatever you like. An herb tahini sauce would also go great with this recipe.

- 3 zucchini
- 2 cup corn
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 2 tablespoon baking powder
- 2 cup all purpose flour
- 3 tablespoon unsweetened almond milk
- sunflower seed oil (for frying)

Step 1
Shred or finely chop up zucchini. Add to a bowl with the corn, flour, baking powder, salt, pepper, garlic powder, and paprika. Mix until everything is well combined.

Add the almond milk to the bowl. Mix until you have a consistent and thick batter.
