Cookies are delicious; everybody knows that. Honestly though, there are tons of people that can’t eat dairy and therefore cannot eat the majority of cookies put in front of their face. This is a travesty. With this recipe, you can brighten the day of someone who is lactose intolerant/vegan/picky with very little effort. Be nice, but not too nice, you know. That’s what Gandhi would say.
Vegan Chocolate Chip Cookies

- Total Time:24 minutes
- Servings:Makes about 15-20 cookies
- Medium
- 1/2 cup coconut oil
- 1 cup brown sugar
- 1/4 cup almond milk
- 1 tablespoon vanilla extract
- 2 cup flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup vegan chocolate chips
Ingredients
-
Step 1
Preheat your oven to 350ºF.
-
Step 2
Mix together the coconut oil and brown sugar.
-
Step 3
Add the almond milk and the vanilla.
-
Step 4
Mix all of the dry ingredients together in a different bowl; flour, baking soda, baking powder, and salt.
-
Step 5
Add in the dry ingredients to the wet ingredients little by little and mix.
-
Step 6
Fold in the chocolate chips.
-
Step 7
Form into balls and place on an ungreased cookie sheet. The dough will be thick and that’s fine!
#SpoonTip: If you want less cake-like cookies, mash down the dough balls a bit with you palm to get flatter, mushier cookies.
-
Step 8
Bake for no more than 10 minutes. 7 minutes was perfect for me.
