Last year I had some frozen raspberries in my fridge and didn't know what to do with them: eat them cold and pretend its sorbet? Heat them up and make a raspberry soup? Nope, nope, nope. I knew that these frozen little red berries must have a purpose, so I started inventing.

It's no doubt that I am a huge fan of chia seeds; they are healthy, low in calories and there are so many ways to prepare them. The following recipe is a very easy way to use the magic of Chia seeds for a healthy and homemade marmalade.

- 400g Frozen Raspberries
- 30g Chia Seeds
- 1 Lemon

Step 1
It couldn't be easier: throw your frozen raspberries in a bowl and let them melt at room-temperature for at least 2 hours.

When your raspberries are defrosted and soft, break apart the remaining clumps and stir it.

Add the juice of one whole lemon. You can also use water or orange juice to give it extra flavor.

Finally, add the chia seeds and mix everything together.

The Chia seeds need a while to absorb the liquid. It's best to keep the marmalade in the fridge over night and enjoy it with some scones and butter in the morning.
Chia seeds are so diverse: you can sprinkle them over salad, throw them in your morning smoothie or add them to your homemade bread dough.
