Malibu by Miley Cyrus is the ultimate anthem for summer 2017. In a radio interview, Miley explained that she wrote it in a car, therefore it's a song meant for the car. It's the kind of tune to bop your head to while a warm breeze runs through your hair. Summer is the season for long road trips, which calls for road trip snacks. This tropical, Malibu-inspired trail mix is the perfect snack to munch on during those summer drives.
Malibu Trail Mix
- Prep Time:2 mins
- Cook Time:3 mins
- Total Time:5 mins
- Servings:2
- Easy
- 1/3 cup popcorn kernels
- spray bottle coconut oil
- 1 Tablespoon salt or to your taste
- zest one lime
- 2 teaspoons lime juice or about 1/2 a lime
- 1/2 cup coconut chips toasted
- 1/2 cup dried mango
Ingredients
-
Step 1
Pop the popcorn using either an air popper or the microwave. To pop in the microwave, place the kernels (no oil needed!) in a popcorn bowl or bag, set the microwave for 3 minutes, and take it out when the popping is more than 3 seconds apart.
-
Step 2
Spray the popcorn with coconut oil so the seasonings will stick. Then, add the salt, lime zest, and lime juice. Toss to coat.
-
Step 3
Add in the mix-ins and toss to combine. Package up the trail mix for a tropical grab-and-go snack.
For maximum summer vibes, I recommend playing Malibu in the background while snacking. The coconut, lime, and mango flavors make this like a tropical drink you can take on the go. Plus, this recipe is vegan (so Miley-approved). It turns out, the sky is more blue in Malibu.
