If there was one thing that caught our attention in the whole of the Harry Potter series (apart from the Butterbeer, ofcourse), was the massive amount of pumpkin juice they consumed. I always wondered what it actually tasted like, since the prospect of pumpkin juice was unimaginable. However, I decided that the best way to overcome my curiosity was to satiate it.
So I threw in some of my all time favourite flavours; cinnamon and vanilla, along with some pumpkin pulp obviously, and made one of the tastiest drinks I've ever had.
Pumpkin Juice

- 10 dried apricots
- 1 1/2 cups water
- 2 cups apple juice
- 1 cinnamon stick
- 3 pieces thinly sliced ginger
- 1/2 teaspoon vanilla extract
- 1/2 cup pumpkin puree
- almonds and hazelnuts optional
Ingredients

Step 1
Soak the apricots in the water for at least 4 hours or overnight in the fridge.

Mix the apple juice, ginger, vanilla extract, cinnamon stick and bring to a boil. Simmer for a few minutes on low flame once the mixture is boiled.

Put the soaked apricots along with the water in a blender and blend until smooth.

Pour the pumpkin puree and the nuts into the apricot blend and blend again.

Strain the apple juice mixture into the blender. Make sure only the juice comes through. Blend till properly smooth.

Drain the juice from the blender into a jug through a fine mesh filter so that any thick pulp doesnt come into the juice.
Pour into 4 tall glasses served with iced cubes and enjoy!
