When I think of summer vegetables, tomatoes are the first to come to mind. It’s time to try and make your own tomato sauce.
Roasting tomatoes is my favorite way to make a homemade sauce. Roasting them with garlic also adds a lot more flavor. I love fresh herbs and I always have them on hand during the summer time. In my tomato sauce I like to add tons of fresh basil and fresh oregano. Fresh herbs are the key to brightening up any dish.
Roasted Tomato Sauce

- 3 lbs tomatoes
- 1 garlic
- 1 handful fresh basil
- 1 handful fresh oregano
- 3 tablespoon olive oil
- 2 teaspoon salt
- 2 teaspoon pepper
- 1 lb pasta

Step 1
Pre-heat the oven to 350°F. Place tomatoes and garlic in a large pan and drizzle with olive oil. Add salt and pepper. Roast for two hours.

Cook pasta. Add tomatoes and garlic to a blender. Add fresh herbs. Blend until completely smooth.

Coat the pasta with sauce or store in the refrigerator or freezer for later use.
