The following excerpt and recipe for Southwest Power Bowl is from Robin Fields' cookbook, "The Easy Three-Ingredient College Cookbook." It's available for purchase on Simon & Schuster.
Bowl meals that blend cold and warm ingredients give you the crunch of a salad with the comfort of a warm dish. This recipe uses a Southwest-style blend of rice, beans, and vegetables for a satisfying meal you can whip up in less than 15 minutes. If you’re packing this for lunch, keep the lettuce in a sealable bag and add it after reheating the chicken and vegetables. To punch up the flavor, feel free to add your favorite sauces such as salsa, sour cream, or a cilantro lime sauce.
