This recipe uses a Southwest-style blend of rice, beans, and vegetables for a satisfying meal you can whip up in less than 15 minutes. If you’re packing this for lunch, keep the lettuce in a sealable bag and add it after reheating the chicken and vegetables. To punch up the flavor, feel free to add your favorite sauces such as salsa, sour cream, or a cilantro lime sauce.

    Ingredients

  • 1 bag frozen Birds Eye Southwest Style Power Blend
  • 4 ounces cooked chicken breast cut into bite-sized pieces
  • 4 cups chopped romaine lettuce

    Follow package instructions to heat Power Blend in the microwave and set aside.

  • Step 2

    Place chicken into a medium microwave-safe bowl and microwave for a minute or until heated through.

  • Step 3

    Divide lettuce evenly between two medium bowls. Top with chicken and Power Blend. Serve warm.

  • Step 4

    If keeping the second serving for leftovers, store chicken, Power Blend, and lettuce separately.
