- 1 1/2 sticks unsalted butter divided
- 1/2 cup light corn syrup
- 1 cup granulated sugar
- 2 1/2 cup heavy cream divided
- 4 tablespoon bourbon divided
- 6 ounce pitted dates
- 1 cup water
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 3/4 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon orange zest

In a deep pot, add 1 stick of butter, corn syrup, granulated sugar, and 1 1/4 cups heavy cream. Stir to combine.

Cook over medium heat, stirring often, until the caramel reaches a dark amber color, about 20-30 minutes.

Carefully add the other 1 1/4 cups heavy cream (it may bubble up) and 2 tablespoons bourbon. Stir until fully combined. Set aside.
