I was scrolling through YouTube when I came across Emma Fontanella’s pineapple cake recipe; made with fresh pineapples. I tried making it, and it turned out really good so I decided to substitute the pineapples for strawberries. Emma is a professional baker and pastry chef from Italy. She has a blog and a YouTube channel; Emma’s Goodies where she posts simple recipes that everyone can try. I have tried a few of her recipes and they are amazing. This strawberry cake recipe is easy and uses ingredients that you may already have in your kitchen.
Strawberry Cake Recipe (Emma's Goodies)

- 1 3/4 cups flour
- teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup white sugar
- 130 grams fresh strawberries
- 2/3 cups butter
- 4 medium eggs
- teaspoon strawberry extract
- teaspoon salt
- Red food colouring

Step 1
Preheat the oven to 350F.

Pour the strawberries into a food processor or a blender and blend until fine.

Mix together the butter, sugar and strawberry extract.

Add the eggs two at a time with some red food colouring.
#spoontip: Make sure the eggs are at room temperature and try not to overmix the eggs so that the cake does not come out cracked at the top. -

In a separate bowl, sift your dry ingredients and add into the creamed mixture with the strawberries. Mix the batter until the dry ingredients are well incorporated.

Pour the batter into a greased 8” square pan lines with parchment paper and bake at 350F for 50-60 minutes or until a toothpick inserted in the centre comes out clean.

This step is optional: Cool the cake and trim the caramelised parts. Cut the cake into squares and top with some whipped cream and strawberry syrup. Enjoy!
