- 32 oz vegetable broth
- 1 tbsp unsalted butter
- 1 tbsp olive oil
- 1 cup Arborio/Carnaroli rice
- 1/4 tsp salt
- 1/4 cup Parmigiano-Reggiano or Pecorino-Romano cheese
- black pepper to taste
- oregano to taste
- optional 1 tbsp red sauce

Step 1
Heat the vegetable stock in a saucepan over medium heat. Once simmering, then lower the temperature and keep warm.

In a separate large pot/skillet, melt the butter and heat the oil. Add the rice and stir for 1 minute to coat all the grains. Add 1 ladle of heated broth to the rice, stir for a little bit, and then leave it for 2-3 minutes (until the liquid is nearly absorbed). Repeat this step until only one ladle of broth is remaining, and turn off the gas.

Add the remaining broth, salt, and cheese to the rice and stir for 2-3 minutes. Sprinkle in the black pepper and oregano. Finally, add in the red sauce if you would like to do so. Once all ingredients have been fully incorporated, serve immediately.
