Breakfast is the most important meal of the day, whether you are an athlete headed to practice, a student going to class, or an adult on the way to work.
Last fall, I was looking for something small, but satisfying to eat along with my coffee every morning, but every time I looked around the grocery store, I was disappointed to find only sugar- packed muffins. This inspired me to search for a muffin recipe that was just as delicious as a store-bought muffin, but also had enough protein and nutrients to keep me feeling satisfied through the morning.
These muffins, adapted from Popsugar's Low-Sugar, High-Protein Lemon Blueberry Protein Muffins recipe, are an easy way to make a nutritious, grab-and-go breakfast for a busy morning.
Protein Blueberry Muffins

- 2 tbsp flax meal or ground flax seed
- 1 ½ cups whole wheat flour
- 2 ½ scoops protein powder
- 2 tsp baking soda
- 1/2 tsp salt
- 1/3 cup honey
- 1/2 cup water
- 1 cup unsweetened soy milk
- 1/3 cup applesauce
- 1 tbsp canola oil
- 1 tsp vanilla extract
- As many blueberries as you want to add. You could substitute with chocolate chips as well.

Preheat oven to 350° and lay out ingredients

In a large bowl, mix together the dry ingredients

Once dry ingredients are mixed, add in the wet ingredients

Mix in blueberries

Pour batter into cupcake liners

Place cupcake trays in the oven

Bake for 15-25 minutes (depending on oven)

Take muffins off of the tray and let cool for 10 minutes
If you aren't a fan of blueberries, try making these muffins with chocolate chips instead.
