If I were sentenced to the death penalty, these S’mores Chicken and Waffles would be my last meal of choice. As much as I love my grandma’s chicken and stuffing, this recipe wins out. Sorry Grandma, I still love you.
This dish is the love-child of two of my favorite foods, what else could I ask for? The s’mores and waffles components lend sweetness to the savory chicken for a perfectly balanced flavor-profile. In the words of the infamous Guy Fieri, this meal takes you “straight to Flavor-Town.”
S’mores chicken and waffles have three parts: double chocolate waffles, graham cracker-coated chicken, and marshmallow-maple sauce. Now that you know what to prepare your tastebuds for, get to cooking.
S'mores Chicken and Waffles

- 3/4 cup whole wheat flour (all-purpose works too)
- 1/2 cup cocoa powder
- 1 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 pinch salt
- 3 large eggs
- 1/2 cup milk (I use almond, but any should work)
- 1/4 cup vegetable oil
- 1/4 cup unsweetened applesauce
- 1/2 cup sugar
- 1/4 cup chocolate chips
- 14 large marshmallows (2 cut in quarters)
- 6 sheets of graham crackers
- 3 boneless and skinless chicken breasts
- 2 tablespoon maple syrup
- 1 tablespoon coconut oil
- Cooking spray for oiling the waffle iron

Step 1
To start making the waffles, whisk together the flour, cocoa powder, baking powder, baking soda, and salt in a large bowl.

In a separate bowl, mix together two eggs, milk, oil, unsweetened applesauce, and sugar.

Add the wet ingredients to the dry ingredients and whisk. Then, add the chocolate chips and chopped marshmallow and stir until just combined.

Coat the hot waffle iron in cooking spray. Then, pour about 2/3 cup of batter into the iron, close it and cook according to the instructions. When it’s finished cooking, take it out of the iron and set aside. Repeat this process until all of the waffle batter is gone.

Now it’s time to make the graham cracker-coated chicken. Put six sheets of graham crackers in a bag and crush them up until they reach a crumbly consistency.

Put the crushed graham crackers on a large plate. Then, in a bowl, whisk one egg.

Dip a chicken breast into the egg, put it on the plate, and coat in graham cracker crumbs on both sides.

Place the chicken into a pan with about a tablespoon of oil in it. Cook the chicken on low to medium heat for roughly 6 minutes a side. Repeat this process of dipping in egg, coating in graham cracker, and cooking until all of the chicken is gone.
#SpoonTip: Make sure the oil isn’t too hot, otherwise the outside crust will burn before the chicken is finished cooking.

For the marshmallow-maple sauce, put the 12 marshmallows, maple syrup, and coconut oil in a large microwave-safe bowl.

Microwave the marshmallow mixture for 1 minute, pausing at 30 seconds to stir it. When it’s reached a smooth consistency, take it out of the microwave.

Everything is done and now it’s time to plate! Place one waffle and chicken breast onto a plate and drizzle with the marshmallow-maple sauce. Dig in and enjoy your one-of-a-kind creation.
