This Lemon Curd Cake Will Make Your Momma Proud

- 1 baked vanilla cake
- 1 cup lemon curd
- 1 cup heavy whipping cream
- 3 tablespoon confectioners sugar
- 1 teaspoon vanilla extract

Step 1
Begin by cutting your cake into layers. We cut ours into three, but feel free to stick with just two layers if you’re worried about messing it up. Use a breadknife for best results.

Combine the confectioners sugar, vanilla extract and heavy whipping cream. Whip until you achieve stiff peaks.
#SpoonTip: Fold in a tablespoon or two of lemon curd to your whipped cream for an extra punch of lemon.

Transfer half of the whipped cream to a piping bag fitted with the tip of your choice.
#SpoonTip: If you don’t have a piping bag, a resealable plastic bag with the tip cut off works just as well.

Step 4
Pipe a ring of whipped cream around the edge of the first layer of cake.

Fill the center with the lemon curd and top it with the second layer of cake.

Repeat steps 4 and 5 for the next layer of cake.

Frost the sides of the cake with the other half of the whipped cream.
