Healthy Pumpkin Pie Bites

- 1 can pumpkin puree
- 1 6oz container plain Greek yogurt
- 2 eggs
- 1 teaspoon vanilla extract
- 2 teaspoons pumpkin pie spice
- 1 tablespoon granulated stevia
- 2 tablespoons honey
- 1 cup pecans
- 1 cup graham crackers
- 3 tablespoons sugar free syrup

Step 1
First, preheat oven to 350° Fahrenheit. Then, add pecans and graham crackers to a food processor until crumbled. Then, add the syrup (can be sugar free, or maple syrup) and blend until a paste forms.

Press paste onto muffin pan to create the crust for the bites, which should be about 1 inch thick each.

For the filling, mix together: pumpkin puree, eggs, yogurt, vanilla extract, pumpkin pie spices, stevia and honey.

Spread filling on top of the crusts in the muffin tin and bake each batch for 30 mins or until fork comes out clean.
