In an effort to eat a little healthier and prolong the fall months, I recently got into butternut squash recipes. When I'm not scouting out fun, new foods at Trader Joe's or perusing Pinterest for recipe inspiration, I make up my own recipes. This one, albeit simple, is my absolute favorite.
You don't have to be a chef to make this — in fact, there's not much cooking involved here. I call them my butternut squash fries, but it's not actually a fried dish. I like to whip up these bad boys for dinner or a late lunch — they make for the perfect side.
Butternut Squash Fries

- 1 box 12 oz butternut squash zig zags or other shape if desired
- 1 tsp olive oil
- 1/2 tsp salt
- 1/2 tsp garlic salt
- Pinch black pepper
- Pinch parmesan cheese
- Other spices if desired

Step 1
Clean butternut squash zig-zags and set aside.

In a medium-sized bowl, mix together olive oil, salt, garlic salt, pepper, and other seasonings.

Add zig-zags to the mixture and mix together. The zig-zags should be covered in the mixture.

Spread zig-zags on a medium-sized pan, and bake in the oven for 10-12 minutes or until crisp.

Whip up some avocado toast or a spunky sandwich to go along with your healthy side of "fries." Enjoy!
